How to make it

  1. Boil the pasta

    Cook the pasta in water according to its packet. Before draining, save a small cup of the cooking water.

  2. Soften the tomatoes

    Rinse and chop the tomatoes. Warm the oil in a pan over medium heat, add the tomatoes and cook for about 5–7 minutes, stirring until juicy.

  3. Add spinach and pasta

    Rinse the spinach, add it to the tomatoes and stir until wilted. Add the drained pasta and a splash of the reserved water. Toss together over a low heat.

  4. Finish with feta

    Take the pan off the heat, crumble over the feta and serve.

A useful detail

Weigh the pasta before boiling. The added water changes its weight, but the recipe estimate uses the original 80 g dry portion.
