How to make it

  1. Soak the couscous

    Put the couscous in a heatproof bowl. Mix the tomato paste with the amount of boiling water stated on the couscous packet, pour over and cover. Leave for the packet’s standing time, usually 5 minutes.

  2. Prepare the toppings

    Rinse and chop the tomatoes. Crumble the feta into small pieces.

  3. Fluff and combine

    Fluff the couscous with a fork. Fold through the olive oil, tomatoes and feta. A squeeze of lemon and a few herbs are optional.

A useful detail

Use instant couscous for this method. Pearl couscous needs a different cooking method and more time.
